This is so easy. And delicious. Lamb. A butterflied leg. Marinate overnight (or a few hours, if that works better for you today) in (1) diced onion, (3) cloves diced garlic, tarragon (2 tbsp dried or more fresh), 2 tsp basil (dried - or more if it’s fresh), olive oil to coat, a healthy dose of balsamic vinegar and enough juice (orange is good, cherry is excellent) to coat it all. Refrigerate until an hour before grilling. Toss a salad while grilling meat to medium rare. Takes ten minutes to prepare marinade and maybe twenty to cook. Please note: I measure nothing. Do what looks/feels and most importantly smells right to you. Enjoy! I should have a photo to tempt the taste buds, eh? Sorry - should have thought of that before dinner! :)
